Buffalo Chicken Bites with Homemade Garlic Ranch

Ingredients
For the Buffalo Chicken Bites
2 lbs boneless skinless chicken thighs, cut into bite-sized pieces
2 cups Buffalo sauce
3 large eggs
For the Marinade
3 garlic cloves (peeled)
2 tablespoons hot sauce
2 teaspoons garlic salt
1 teaspoon smoked paprika
2 cups LACTAID® Whole Milk
½ cup lemon juice
½ cup pickle juice
For the Dredge (Flour Coating Mixture)
2 ½ cups all-purpose flour
¼ cup cornstarch
1 tablespoon baking powder
2 teaspoons garlic salt
For Frying
5-6 cups vegetable oil
For the Garlic Ranch
1 cup LACTAID® Sour Cream
3 tablespoons fresh dill, chopped
3 tablespoons chives, chopped
2 garlic cloves, minced
2-3 tablespoons LACTAID® Whole Milk
1 pinch of Kosher salt
1 tablespoon hot sauce
Directions
Combine the marinade ingredients in a large bowl and then add the chicken. Cover and allow it to marinate in the refrigerator for at least 2 hours.
Remove chicken from the bowl, removing as much of the marinade as possible (pat dry with a paper towel if needed).
Remove the garlic from the remaining marinade and add eggs and whisk together.
Combine the dredge ingredients in a separate bowl. Dip the chicken pieces into the flour mixture, then into the marinade, and then back into the flour mixture. Place onto a wire rack to sit for about 15 minutes, while the oil heats.
Place oil into a large pot over medium heat. Warm to 350-375 degrees F. Add chicken in batches, ensuring not to overcrowd the pot. Fry until golden brown for about 7-10 minutes. Remove the chicken from the oil using a spider or sieve and place onto a wire rack to drain excess oil. Repeat until all the chicken is fried.
Toss the chicken in the Buffalo sauce.
Combine all the ingredients for the garlic ranch sauce in a bowl and serve with the chicken.
