Buffalo Chicken Bites with Homemade Garlic Ranch

Ingredients 

For the Buffalo Chicken Bites

2 lbs boneless skinless chicken thighs, cut into bite-sized pieces

2 cups Buffalo sauce

3 large eggs

For the Marinade

3 garlic cloves (peeled)

2 tablespoons hot sauce

2 teaspoons garlic salt

1 teaspoon smoked paprika

2 cups LACTAID® Whole Milk

½ cup lemon juice

½ cup pickle juice

For the Dredge (Flour Coating Mixture)

2 ½ cups all-purpose flour

¼ cup cornstarch

1 tablespoon baking powder

2 teaspoons garlic salt

For Frying

5-6 cups vegetable oil

For the Garlic Ranch

1 cup LACTAID® Sour Cream

3 tablespoons fresh dill, chopped

3 tablespoons chives, chopped

2 garlic cloves, minced

2-3 tablespoons LACTAID® Whole Milk

1 pinch of Kosher salt

1 tablespoon hot sauce

Directions

  1. Combine the marinade ingredients in a large bowl and then add the chicken. Cover and allow it to marinate in the refrigerator for at least 2 hours.  

  2. Remove chicken from the bowl, removing as much of the marinade as possible (pat dry with a paper towel if needed).  

  3. Remove the garlic from the remaining marinade and add eggs and whisk together.

  4. Combine the dredge ingredients in a separate bowl. Dip the chicken pieces into the flour mixture, then into the marinade, and then back into the flour mixture. Place onto a wire rack to sit for about 15 minutes, while the oil heats.  

  5. Place oil into a large pot over medium heat. Warm to 350-375 degrees F. Add chicken in batches, ensuring not to overcrowd the pot. Fry until golden brown for about 7-10 minutes. Remove the chicken from the oil using a spider or sieve and place onto a wire rack to drain excess oil. Repeat until all the chicken is fried.  

  6. Toss the chicken in the Buffalo sauce.  

  7. Combine all the ingredients for the garlic ranch sauce in a bowl and serve with the chicken.
